March 23, 2016—Technomic’s Breakfast Consumer Trend Report shows that 51% of millennial diners are interested in ethnic breakfast items, up from 44% in 20131. The growing appeal of ethnic options on menus is easy to take advantage of with on-trend turkey products and recipes from Butterball Foodservice.

As multiculturalism and adventurous eating become more popular, chefs can add variety to the menu and appeal to a younger, more diverse group of consumers. The National Restaurant Association’s 2015 Restaurant Industry Forecast notes millennial diners’ unique interest in the breakfast daypart, showing this target demographic is especially interested in breakfast all day and breakfast for dinner.

According to Technomic, Mexican breakfast dishes in particular are trending at full-service restaurants. Chefs and operators can start with these patron-pleasing turkey recipes developed by Butterball’s culinary experts:
