Pasta salad is easy to customize and very versatile—offer this as a grab ‘n go item, side or snack. Also consider increasing portion size to serve as a one-bowl meal.


Green Goddess Dressing

Watercress leaves

½ oz.

Tarragon leaves

½ oz.

Parsley leaves

½ oz.

Chives, coarsely chopped

3 tbsp.

Freshly squeezed lemon juice

½ tsp.

Smoked salt

¼ tsp.

Urfa pepper

¼-⅓ cup(s)



  1. 1. Put all ingredients except water into blender.
  2. 2. Blend until very smooth, adding water if needed to adjust texture.

Asparagus, cut into ½-inch pieces, blanched and chilled

Haricots verts, cut into ½-inch pieces, blanched and chilled

Toasted pine nuts


  1. 1. In a large bowl, toss together all ingredients except pine nuts.
  2. 2. Plate and garnish with a sprinkling of nuts.
