Spiced Harissa & Citrus Oven-Roasted Turkey

Bring something unexpected to the table with this roast turkey dish. It features a South African harissa citrus sauce and is served with a couscous salad and roasted carrots.

harissa paste (mild or hot, to taste)

Zest and juice of 2 oranges

Zest and juice of 1 lemon

garlic cloves, minced

smoked paprika

2 tbsp.

olive oil

2 tsp.

ground cumin

1 tsp.

ground coriander

Salt and pepper to taste

Fresh herbs (thyme, rosemary, parsley)

onion, quartered

orange, sliced

lemon, sliced

Directions

  1. 1. Make the Harissa Citrus Rub: In a bowl, combine harissa paste, citrus zest and juice, garlic, paprika, cumin, coriander, olive oil, salt, and pepper. Mix into a thick paste.
  2. 2. Prep the Turkey: Remove from the packaging and reserve the renderings. Rub the turkey with the Harissa mixture and place into the pan.
  3. 3. In the Pan: Place orange and lemon slices, onion quarters, and fresh herbs around the turkey in the pan with renderings. Sprinkle the Italian seasonings over the run and the fruits and herbs.
  4. 4. Roast: Preheat the oven to 350°F. Place the turkey on a roasting rack in a pan. Place the turkey in the oven and roast for 45 minutes until the rub and turkey are golden brown. Remove from the oven and let rest for 5 minutes and baste. Ready to slice and serve.
  5. 5. Rest: Let rest at least 20–30 minutes before carving.
