  1. Thaw turkey thigh roast under refrigeration 2 days in advance.
  2. Preheat oven and braising pan to 350 degrees.
  3. Remove turkey thigh roast from packaging, cut the turkey thigh roast into 2" X 2" pieces and add it to a hotel pan (with the turkey broth from bag).
  4. Cover pan with foil and bake for 25-35 minutes. Product must reach an internal temperature of 165 degrees for 15 seconds. Remove from oven, shred turkey, and set aside.
  5. Add vegetable oil to the braising pan. Add diced jalapenos, sliced onions and green peppers to pan and saute for approximately 5 minutes, or until vegetables are tender.
  6. Add shredded turkey to braising pan, mix thoroughly to incorporate all ingredients. Cook for 5 minutes. Product must reach an internal temperature of 160 degrees for 15 seconds
  7. Transfer turkey and vegetable mixture to 2" half long pans and hold in warmer until service.
  8. Prepare queso cheese per manufacturer instructions. Transfer to 2" half long pans and hold in warmer until service.
  9. Place hoagie rolls in warming cabinet 5-1 O minutes prior to service.
  10. Assemble Turkey Philly Cheesesteak by placing 1 cup of turkey and vegetable mixture on a hoagie roll, followed by 1.5 oz. of queso cheese sauce.
