Turkey Adobo Bowl

Turkey breast easily takes on Filipino-style flavors in a unique and irresistible bowl of layered brown rice, corn, black beans and avocado.

Ingredients

1 tbsp.

Tomato paste (could use low sodium)

1 tsp.

Olive oil

1 tsp.

Red wine vinegar

½ tsp.

Adobo seasoning

½ cup(s)

Brown rice, cooked

½ cup(s)

Black beans, drained/rinsed

½ cup(s)

Corn

¼ cup(s)

Avocado, cubed

1 tsp.

Cilantro, chopped

Directions

  1. 1. In a small bowl, mix tomato paste, olive oil, vinegar, Adobo seasoning, add in the turkey and stir to coat.
  2. 2. In a serving dish, layer the rice, corn, black beans, turkey and top with cubed avocado and cilantro.
