  1. Cook Turkey Thigh Roast per package instructions.
  2. Remove Turkey Thigh Roast from oven, break up into bite size portions, cover, and place in a hot holding cabinet.
  3. Place Tortillas in hot holding cabinet for 1 O minutes prior to assembly.
  4. To assemble wraps:

  1. Place warm tortillas on a clean prep table.
  2. Place 1/2 TBS of mustard on the center of each tortilla, followed by 3 pickle slices, 1 slice of Swiss Cheese, 2 oz. of Turkey Ham, and 2 oz. of Turkey Thigh Roast.
  3. Wrap Cuban Wraps in foil or deli wrap.
  4. Place in hotel pans in hot holding cabinet for service.
