Turkey Sausage Stuffed Mushrooms
Serve a melt-in-your-mouth delight with these stuffed mushrooms from Chef Lisa Brooks. With an aromatic turkey sausage mixture combined with cream cheese, this dish is bursting with satisfying flavor and textures.

Small jar Roasted Red Peppers

Tomato paste

Red wine vinegar (or red wine)

Butter, melted

Directions
- 1. Preheat oven to Broil.
- 1. Add basil and vinegar to sausage and mix well. Place sausage, seasonings and minced onion in large skillet and cook over medium high heat until browned. Drain excess oil. Lower heat to medium and add tomato paste and cream cheese and stir until well incorporated.
- 1. Remove stems from mushrooms and use spoon to remove interior flesh of mushroom to prepare for stuffing. Brush mushroom caps with melted butter. Lightly season with salt and pepper. Stuff with filling and sprinkle parmesan cheese on top. Broil for 2-3 minutes until lightly brown and parmesan is melted.
- 2. Serve with dollop of chopped roasted red pepper on the top.
