Flavor-Boosting Marinades

Marinades are a busy chef’s best friend. They’re the perfect way to add layers of flavor without lifting a finger—time does the work for you. Simply combine a couple key ingredients and coat the food you’re marinating. After a few hours, your flavorful food is ready to cook.

Marinades usually include an acid, as well as various herbs and spices. This basic marinade recipe can be altered to your liking. Replace cider vinegar with any other type of vinegar, citrus juice, or even wine.

BASIC HERB MARINADE

    • 1/2 cup canola oil

 

    • 1/2 cup apple cider vinegar

 

    • 1 Tbsp. chopped fresh marjoram

 

    • 1 Tbsp. chopped fresh thyme

 

    • 1 Tbsp. chopped fresh sage

 

    • 1/2 tsp. salt

 

    1/2 tsp. freshly ground black pepper

Combine ingredients in a small bowl. Place whole 10-lb. turkey, cleaned and drained, in a plastic cooking bag. Add marinade, secure bag and refrigerate for several hours.
