Breakfast "Muffins"

Try these mini egg muffins to power up the day at the table or on the go, with turkey sausage, turkey bacon, peppers and green onions.

Ingredients

Yield: 6 muffins

2 tbsp.

Green onion, diced (green part only)

2 tbsp.

Red pepper, diced

3 lg.

Large eggs

4 oz.

2% milk

¼ tsp.

Pepper

Directions

  1. 1. Beat eggs with milk and pepper.
  2. 2. In greased muffin tins, layer ½ of a chopped Breakfast Turkey Sausage Patty and ½ slice of Turkey Bacon, add the vegetables and pour the egg mixture over the top.
  3. 3. Bake at 350 degrees for 20 minutes or until toothpick inserted in center of muffin is clean.
