Ground Turkey Stuffed Peppers

Bright peppers offer an eye-catching way to serve a delicious stuffing mixture of seasoned ground turkey, vegetables, quinoa and brown rice.

Ingredients

Peppers, green, red, yellow, orange, tops removed, seeded, make sure they can rest evenly in a baking dish

2 tbsp.

Olive oil

1 cup(s)

Onion, chopped

½ cup(s)

Zucchini, finely chopped

1 15 oz

Can Fire roasted tomatoes, diced, and no salt added (with the juice)

1.5 tbsp.

Tomato paste

Italian seasoning

1 tbsp.

Parsley, chopped

½ cup(s)

Brown rice, cooked

½ cup(s)

Quinoa, cooked

To Taste

Directions

  1. 1. Preheat oven to 350 degrees.
  2. 2. Wrap the peppers in foil, put in a baking dish and roast in the oven for 15 minutes and then remove from the oven.
  3. 3. In a large skillet, brown the ground turkey with the onions and peppers, until browned, then add the zucchini, tomatoes, tomato paste and seasoning.
  4. 4. Add the quinoa and brown rice and mix well.
  5. 5. Remove from heat.
  6. 6. Fill each pepper to the top and cook another 15 minutes or until pepper is soft.
  7. 7. Sprinkling cheese is optional.
